The Morin 2008 Bourgogne Chitry Olympe which had been racked
from barriques and demi-muids and assembled in tank when I tasted
it in April unites three different Chitry terroirs (ordinarily
it would incorporate four, but the Vau du Puits on which, see
my tasting note was bottled separately this vintage). Pear,
white peach, lemon lily-of-the-valley, and narcissus in the
nose migrate to an infectiously juicy palate seemingly infused
with chalk dust and sea salt.
